Striped jeans & the coziest sweater

I always gravitate towards anything striped – maybe it’s the whole nautical thing and me being obsessed with the beach? I don’t know what it is, but when I saw these striped Joe jeans, I NEEDED to get them. I found them at Marshalls (of course!) and the girl ringing me out was like “Are you buying these for a Halloween costume?” —- Uhm no I actually am not. I plan to wear them with some heels and a plain white t is what I told her. “Oh, I thought you were dressing up as Beetlejuice, she continued”….stripes1112…No, that was not my plan, but I guess these would be perfect for a Beetlejuice costume too! I stuck with what I said and love how these look with a plain white t and my favorite cozy sweater that I also wore with my Denim on Denim outfit. Keep everything else basic SO the attention is on the pants – not that it wouldn’t be anyways, but you know what I mean. I also wore these with my white Keds sneakers, a black t-shirt and a plain black baseball cap the other day for a more dressed down look. My bag & watch are both Michael Kors, bracelet is Victoria Emerson (I love the wrap ones, I bought them for all the girls on my Christmas list last year) and shoes are Nine West.

Tuesday Ten: Healthy Thanksgiving Recipes

The holidays are upon us – the Thanksgiving to New Year’s season seems to take forever to get here, but then goes by way too fast! It’s the time we forget about our diets because it’s just SO hard when delicious traditional food is all around us – we can’t get away from it. From spending time in the kitchen with family and friends to work holiday parties to simply running errands – the smells of pumpkin spice, peppermint mocha and gingerbread are everywhere.

With that said, I always try to incorporate some healthy options into the feasting to balance out the inevitable overeating and indulging. We are running a 5-miler on Thanksgiving morning as well! I hope my fiance and brother go easy on me this year!  Although I have become a better runner with some of the tweaks I mentioned here.

Here are 10 yummy, must try recipes  …

 

1. Hummus Mashed Potatoeshummus-mashed-potatoes-1-576x383

I mentioned this before in my Baked Chicken recipe, but my family doesn’t ever make mashed potatoes for Thanksgiving. Although, they don’t celebrate Thanksgiving in Europe, we incorporate some European dishes into our meal. We make Kluski , Polish dumplings made out of potatoes — I’m obsessed. Anyways, this humus mashed potatoes recipe from Gimme Some Oven will make it to the dinner table this year because they substitute heavy cream in traditional mashed potatoes with creamy, healthy hummus. I can’t wait to bring them over for dinner and see what everyone thinks. 

2. Roasted Butternut Squashbutternut-squash-roasted-with-rosemaryA no brainer. This buttery squash is packed with antioxidants, dietary fiber and vitamin A, and its low in fat. I found a super flavorful recipe from PopSugar; just make sure you add some type of herb. I usually add rosemary because it survives the colder nights on my deck, so I still have it! If you don’t know where to start with peeling and cutting the butternut squash, I made a simple guide (because I was lost myself at first! – like do you peel it or not type of confusion)

3. Vegan Green Bean Casserolevegan-green-bean-casserole-2My family doesn’t make a casserole dish either for Thanksgiving, because we are so obsessed with our European dishes that we have not adopted a lot of the American traditional ones. I made a vegan vegetable casserole dish last year though and it was a show stopper! I am going to make this one this year and hope it gets the same positive response. We have been adding a lot more vegetables to the family meals (Nico and I eat A TON of veggies and fruits but my immediate fam not so much) I don’t think mushrooms are considered a vegetable – but my dad sure thinks so! I have been bringing the greens each year, and it has slowly caught on. This dish from Eat the Love just happens to be vegan, gluten-free, grain-free and paleo-friendly.

4. Golden Beet Soup with Roasted Garlic Cashew CreamI LOVE soup and so does the family, but we actually have never incorporated a soup into our Thanksgiving meal. We do for Christmas Eve and Day but not Thanksgiving. I think this one from With Food and Love might be a great new addition.

5. Farro, Cranberry and Goat Cheese Salad

With four times as much fiber as brown rice, you know this salad will be extra filling. I love this recipe from Life’s Ambrosia. The colors look so beautiful and the flavors blend so nicely.

6. Kale Salad with Quinoa, Pistachios and Pomegranate Seeds0e91c1c99f0b527443a4ea64cc58f120Nico made this salad last year and it was a hit! The idea came from one of our favorite stores, Williams Sonoma. You can substitute the pistachios with another nut – we used walnuts and added some goat cheese as well. If you need help prepping the pomegranate, I finally mastered a way to get the seeds out without any mess and I shared it here.

7. Herb-Roasted Turkey Breastimg_4046-560x373This baked recipe from Ina Garten is packed with flavor. I used to always go for the dark meat when I was younger, but I opt for the lean breast nowadays. 

8. Easy Baked Apple Pie Appleseasy-baked-apple-pie-apples-5461I love these! I made similar ones without the pie crust a few weeks ago. My recipe for Simple Baked Apples is posted here. These from Deliciously Sprinkled definitely make for a better presentation.

9. Pumpkin Cheesecake Bitespumpkincheesecakebites1These bite-sized desserts by Oven Love are the absolute perfect size! I don’t know about you, but my family likes to have an entire table filled with desserts and it gets really hard to try everything, but with smaller sizes — it can be done! They can easily be made gluten-free too. 

10. Cider-Bourbon Cocktailburbon-maple-apple-cider-cocktail-3-600x919Bourbon has been growing on me. Nico made this cocktail for all of us when we were in NY visiting my cousin and her boyfriend a few weekends ago. Surprisingly, it was delicious — the ginger, lemon and apple flavors come together nicely.

I am loving this weather lately. It’s the second week of November and although it could snow any day now, the bright sun shining and the 60 degree days are pretty amazing. I’m not a fan of the cold at all and anyone that knows me knows I would rather be smoldering hot than be cold. All the layers in the world just don’t work– basically my fingers and toes get so unbearably cold that I can’t handle it! I have bad circulation so I have yet to find something that works well for those long amounts of time outside (dog parks, skiing, hiking, football games). I need hand warmers for each individual finger and toe warmers for each individual toe. I should get myself those gloves that have that ability – has anyone tried them? read more…

I have been exploring with making a rotisserie style whole chicken at home. If you can cook a whole chicken for a Sunday dinner (and have it taste amazing) than you officially are a self-sufficient grown up. For some reason, roasting a whole chicken seemed like something I would just never be able to do — I accepted that I would only have this meal when I went to my parents house for dinner. I never thought I would know how to make it myself. Turns out, I was over-reacting – it really is SO simple! Cookies for Breakfast – uh yes.

On Sunday, I make dessert… okay it’s not just on Sunday –I have something for dessert every night — but on Sunday, I put more thought into actually making something. You know, more than just a spoonful of Nutella (Does anyone else do that!? It’s so addicting) or some vanilla gelato with berries –no effort kind of dessert. I love to explore with what ingredients I have on hand and whip up a new recipe. Everything I make these days has some health benefit to it, so it’s no surprise these cookies are packed with healthy alternatives! In fact, they are a perfect, healthy little breakfast on the go. Hence, why I made a big batch last night and sent Nico to work with a home-brewed iced coffee and a ziplock with these cookies. I mean they have bananas, peanut butter and oats – that’s breakfast-y, right?

I hope everyone has had a great week and is looking forward to the weekend! Ladies, it’s Patriots Bye Week, so it’s your chance to get your man out this Sunday for some fall activities! Take advantage of it! There is still plenty of foliage to see. 

Many many leaves have fallen already though, which makes for a beautiful colorful pathway on the my daily walk with Freddy through the forest. Beware though, as fun as it may be kicking the leaves or picking up a bundle to throw (great photo-op!), many of these leaves are moist from the heavy rain we got which is a perfect recipe for harvesting ticks!  Make sure to check your dog and yourself for these nasty bugs!  Even if your dog has flea/tick treatment, the ticks will most definitely still be all over hovering on their hair/fur. And if you have a goldendoodle like myself or any other fluffy hair dog, GOOD LUCK! I picked out about 12-14 different size ticks from Freddy after our walk the other day.

I have become quite the pro at removing them too. Mama bear kicks in and I snatch them off of him without thinking about it — grab the critter using 2 fingers as if you were pinching them and throw away(flush them!). If the tick is embedded in your dog already, you need to make sure to remove the entire tick from the skin. I have done it instinctively with my pinching method, however that is not the best approach as it could break and be left in the skin SO here is a video that shows you how to do it properly. The reason Freddy had a tick inside his skin in the past was because I was trying out natural tick remedies but they clearly did not keep the ticks from getting in. Luckily, I check him daily so the tick was not there too long.

I love wearing rompers or matching tops and bottoms. I always add a sweater, purse or a scarf in a different color to add some contrast though! I’m wearing my Joe’s jeans again with my J-Crew jeans shirt and my cardigan that I have worn with every outfit this week! It’s just so soft and the color goes with absolutely everything. My mom just got me these Dolce Vita dark gray booties she found at Marshalls! All my other boots have the little flap in the back bitten off from when Freddy was a puppy and chewed them off! So I was due for some new boots. Thanks Mom!
